My Travel Story

When I visited Italy in March of 2015 my intentions were to enjoy every bit of my trip. I had no Idea that my visit to Apicius, intended  for a group of high school culinary students I was helping to chaperone, was actually meant for me! Upon meeting Massimo Coppetti and touring the school I got the same sense of family that I did when I visited my beloved University of Houston. At the time my intentions were to attend a culinary school in New York City. Two Years later and I still had not made the move to the big apple.  But just like the best things in life they hit you when least expected. Which is exactly what happened, I got into a wreck!
Thankfully I and the other driver are ok, however my car was totalled. But out of this accident came an amazing opportunity. Instead of buying another car I decided to invest in, not only myself, but a school where I feel I can thrive. And Apicius is just the right place for me to flourish. The feeling of familiarity never went away, which made this an effortless decision.
I knew I wanted to be a pastry chef at a very young age and even then I loved how detailed and complex confections can get. The challenge of baking deepens my passion for it every time I step out of my comfort zone and try something new. After reading about Apicius and its namesake marcus Gavius Apicius, I learned how similarly we look at gourmet cooking. Many of the ingredients are complex in flavor and the recipes are complex in cooking method. Both of which I admire and attempt in each recipe I try.

I hope to bring my youthful passion to Apicius in  Florence, and develop my baking and pastry skills to the best of my ability, with the training in the Master’s program. In this program I hope to expand my flavor profile and incorporate those flavors into culinary ideas of my own . I plan to seek an internship to further my professional experience and ingenuity . Above all I hope to continue to push myself out of my comfort zone and try new and ingenuitive confectionaries.  Even though my decision to attend Apicius came out of an adverse situation I have the drive to persevere and pursue my passions.
