My Travel Story

I’ve built something special on this island  a plant-based restaurant born out of love, resilience, and the belief that food can nourish more than just the body. But to grow as a chef and a creative, I know I need to step outside of what I know.


This fall, I’m traveling to the UK to immerse myself in kitchens that are pushing boundaries in flavor, sustainability, and culture. I’ve planned to stage (intern) at several restaurants and learn directly from chefs who inspire me techniques, recipes, and systems I want to bring back to my own kitchen in Puerto Rico.


This isn’t a vacation it’s a mission.
My goal is to return with fresh ideas, renewed energy, and a deeper understanding of global plant-based cuisine all of which will go directly into improving the food I serve, the experience I offer, and the way I run my space.
